The part of the neck of the bottle is immersed in a cooling tank filled with a freezing solution which has the task of quickly freezing the wine in the part next to the crown cap, where the yeast residues accumulate following the remuage.
Once the bottle is opened, the cylinder containing the lees is expelled thanks to the internal pressure.
The bottles are loaded manually, while the unloading is carried out automatically. The advancement of the bottles is guaranteed by a fully mechanical device.
